We believe it’s not only the best way – but the only way to go – as this freshness comes from our beans traveling in de-gassing bags as they journey to your pad. Our bags help you catch the peak flavor of your coffee, which occurs between 2 and 14 days of its short life.
Our Roast Master must “Be the Bean” in order to harness the raw “green” bean’s unique flavors. He digs, investigates, nurtures, and presents them to you in unblemished bliss. Through far out scientific precision, the Roast Master achieves bodacious taste by pondering and implementing several variables: time, temperature, airflow, and mechanic variations.
These variations guide the Roast Master down the road to perfection and make up the Roast Profile. Roasters achieve this Profile by varying temperatures and times of each roast to maximize the bean’s flavor. Adding and subtracting heat at pinpoint times ensures that the superb flavors stay put, while the substandard flavors dissipate. Lighter roasts love lower temperatures and shorter times. Most roasts take between 13 -16 minutes from start to finish, where it is then cooled in the Roaster’s cooling tray for 5 minutes as the next batch is prepped.
The art of storing coffee revolves around barring your beans from oxygen, heat, and light. To avoid these taste-killers, we swiftly pack beans into our bags after they have cooled. However, the beans are still degassing, which is the natural releasing of gasses that have built up during the roasting process. Mega roasters solve this problem by grinding the beans, letting them sit for a few days before packing them in airtight containers after they've basically gone stale. Monk’s is on the ball though. Our double-secret-probation “one way” valve bags allow the degassing progression, while simultaneously keeping that vile oxygen out.
